Recipe #3603

Spicy Sesame Beef Shirataki Ramen

Difficulty: Medium
Time: 30 min
Cost: Medium ($$)

Ingredients

14 oz shirataki noodles (2 packages) 8 oz flank steak, thinly sliced against the grain
4 cups beef bone broth 2 tbsp toasted sesame oil
1 tbsp fresh ginger, grated 3 cloves garlic, minced
1 tbsp sambal oelek or chili paste 2 tbsp tamari (gluten-free soy sauce)
2 baby bok choy heads, halved lengthwise 2 large eggs
2 green onions, thinly sliced 1 tsp toasted sesame seeds

Instructions

1
Prepare the shirataki noodles by rinsing them thoroughly under cold water for at least a minute to remove their natural scent. Boil them in a pot of water for 2 minutes, drain well, and then dry-fry them in a non-stick skillet over medium heat without oil for 5 minutes until they squeak and look dry. Set aside.
2
In a large soup pot, heat the toasted sesame oil over medium heat. Add the minced garlic, grated ginger, and sambal oelek. Sauté for 1 to 2 minutes until fragrant but not browned.
3
Pour in the beef bone broth and tamari. Bring the mixture to a gentle simmer. Taste and adjust the spice level with more chili paste if desired.
4
While the broth simmers, prepare soft-boiled eggs in a separate small pot. Boil eggs for exactly 6 and a half minutes, then plunge into an ice bath. Peel and slice in half.
5
Add the halved baby bok choy to the simmering broth and cook for 2 to 3 minutes until tender-crisp.
6
Add the thinly sliced flank steak directly into the hot broth. It will cook very quickly, taking only about 1 to 2 minutes to reach desired doneness.
7
To assemble, divide the prepared noodles into bowls. Ladle the hot broth, beef, and bok choy over the noodles.
8
Top with the soft-boiled egg halves, sliced green onions, and a sprinkle of sesame seeds. Serve immediately.

About This Dish

This deeply flavorful soup brings the heat of a traditional ramen house without the heavy carb load. By utilizing shirataki noodles, also known as miracle noodles, we keep the net carbs extremely low while the rich bone broth provides a comforting, velvety texture. The flank steak cooks instantly in the hot liquid, remaining tender and juicy, while the sesame and chili create a complex, aromatic profile.

Inspiration

I wanted to recreate the satisfying slurping experience of a spicy Tan Tan Men or spicy beef ramen but adapted strictly for a ketogenic lifestyle.

Health Information

This dish is excellent for keto and low-carb diets due to the zero-carb shirataki noodles. The bone broth is rich in collagen and electrolytes which helps combat the keto flu, while ginger and garlic provide anti-inflammatory properties. It is high in protein and healthy fats.
