Difficulty: Low
Time: 30 min

Ingredients

chicken breast, boneless, skinless 1 lb
soy sauce 3 tbsp (divided)
cornstarch 1 tbsp
sesame oil 1 tsp
ginger, fresh, grated 1 tbsp
garlic, minced 2 cloves
broccoli florets 2 cups
carrots, sliced thin 1 cup
red bell pepper, sliced 1 large
yellow onion, sliced 1/2 large
vegetable oil 2 tbsp
water or chicken broth 1/4 cup
brown rice, cooked for serving

Instructions

1
Slice the chicken breast into thin strips. In a medium bowl, combine the chicken, 1 tablespoon of soy sauce, and cornstarch. Toss to coat and set aside to marinate for at least 10 minutes.
2
In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, sesame oil, grated ginger, and minced garlic. Set aside.
3
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove the chicken from the wok and set aside.
4
Add the remaining 1 tablespoon of vegetable oil to the wok. Add the broccoli florets and carrots and stir-fry for 3-4 minutes until slightly tender-crisp. Add the red bell pepper and yellow onion and continue to stir-fry for another 2-3 minutes.
5
Return the cooked chicken to the wok with the vegetables. Pour the prepared sauce over everything and add 1/4 cup of water or chicken broth. Bring to a simmer and cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
6
Serve immediately over cooked brown rice.

About This Dish

This vibrant chicken and vegetable stir-fry is a quick, flavorful, and customizable dish perfect for a busy weeknight. Originating from Chinese cooking traditions, stir-frying is a technique that involves quickly cooking ingredients in a small amount of oil over high heat, resulting in tender-crisp vegetables and succulent meat. It's a fantastic way to incorporate a wide array of colorful vegetables into your diet.

Inspiration

My inspiration for this dish comes from the universal appeal and versatility of stir-fries. They offer a perfect balance of savory flavors and fresh textures, and can be adapted with whatever ingredients are on hand, making them both practical and exciting.

Health Information

This stir-fry is a powerhouse of nutrition. Chicken breast provides lean protein essential for muscle repair and growth, while the variety of vegetables (broccoli, carrots, bell peppers, onion) are rich in vitamins, minerals, and dietary fiber, promoting digestive health and boosting immunity. Using low-sodium soy sauce can help manage sodium intake, and serving it with brown rice adds whole grains for sustained energy. It's naturally gluten-free if using tamari instead of soy sauce.
